We didnt realise the amazing sensual and delicious fruit that is the fig until we moved to Rosnay and ate the figs growing in the back yard of the farm house. A few years later we managed to get cuttings of 12 different fig varieties from Gosford Ag Research Station and then propagated the most promising varieties from them. In February and March we are in fig season, merrily eating and picking figs for fresh market, drying, cooking and even making liqueurs.

A Gift of the Gods
Of the main varieties we grow – Black Genoa, White Adriatic, Yellow Ischia, Purple Hollis, Brown Turkey and the original “Rosnay Back Yard”, the White Adriatics are the most sought after for their amazing falour and colour.
Whilst a delicate fruit, the trees are ideally suited to the long dry autumns of Canowindra and the Cental West generally. We harvest every few days and ship to Sydney markets in fresh fruit trays.

The Future is Cut and Dried!
The next thing we do is dried figs, our simplest product. Simply cut in half and dry them. The culinary figs that we grow are more “fig flavoured” and aromatic than the imported dried figs, which have been more processed than ours.
In this photo we are drying figs in the direct sun, but we also have a drying room which has a solar powered dehydrator and ensured we dont get any of those pesky mouldy figs in humid weather!
