Our olives are picked from our organic olive groves, locally cold pressed, then slowly settled and hand bottled on site without filtration. Store in a dark, cool location.

This oil is stunning. We visited the Organic farms at Canowindra and at Rosnay we bought the olive oil, olives, tapenade and figs soaked in port (wow).
The extra virgin olive oil is silky smooth, beautiful mellow taste and no residual acidity. We use it in and on many, many dishes which span Australian cuisine, English cuisine, Asian cuisine and Lebanese cuisine. It is stunning on all of these as well as in za’ataar, hommous, baba ganoush, and on a variety of breads. I will be buying more of this EVOO from the stockists in the Blue Mountains.
