We planted Cabernet Sauvignon as cuttings direct in the vineyard in 1998 on some lower slopes with cool night time temperatures for gentle, slow ripening of the fruit. Unfortunately, today only a small portion of the original 4 hectares remains as the vines became old and suffered from trunk disease, with the block being replanted in 2021.
The 2017 Cabernet Sauvignon was the last big crop that we picked from those vines and it was made into wine by our friends at Thistle Hill winery, at Mudgee. It was open fermented and foot trodden for gentle tannin extraction and balance. Its style is medium bodied with lots of dark berry and mint character typical of the variety.
