Vin de Garage “Bon Bon” Vermentino

Organically grown vermentino, whole bunch pressed, cold settled, and inoculated with wild yeast.
Towards the end of the fermentation the wine was chilled and racked, and blended with a touch of skin contact chardonnay.
The final wine has a delicious punchy sweetness and a zingy and savoury acidity to match.
You might want to keep it cool in case it goes “pet nat” in the bottle!
No sulfites, added yeast, fining agents or any other additives were used from harvest to the finished product.
