Every few years we make a varietal Semillon as an example of the style.
Unwooded, this wine has a delicate nose and a subtle, grassy and citrussy palate. As the lightest of the whites in the range it is ideal with more delicate foods. Semillon 100%; Alcohol: 12.9%; Acidity: 6.4 g/l; Residual sugar: 1.5 g/l; Animal proteins: fined with milk; Sulphur dioxide: 29ppm free / 114ppm total
Whole, clean and fully ripe figs are gently poached in a syrup of organic raw sugar, apple cider vinegar, lemon juice, Rosnay port (2%), cinnamon, and cloves. A small amount of syrup remains and is bottled.
