The Sweet Smell of Fig Syrup

Thanks to all who have patiently awaited the bottling of the Fig Syrup, finally bottled now just as the leaves fall from the fig trees onto the frosty ground.

The syrup is essentially the concentrated goodness of the figs in syrup, progressively accumulated and stored in the cool room until the end of the fig harvest. There is not a lot of it. It is made from figs boiled for 3 hours in a syrup of organic raw sugar, Rosnay port, a touch of vinegar, cinnamon and cloves. The smell is figgy, and the flavour competes with maple syrup. Its delicious with natural yoghurt, fruit compotes, pancakes, even porridge if you are naughty.

We are currently applying the labels but we just couldn’t resist sharing the news now. And a few photos, courtesy of Anna and Dan, who are Aussies wwoofing their way around Australia, wisely picking the brains of growers before starting their own farm.
