Vermentino, hand picked, chilled in the cool room, whole bunch pressed, wild yeast fermented “in the egg”, lees stirring, racking and bottling without filtration.
This wine shows the natural style of Vermentino – full of citrus fruits, with a slightly saline, bitter finish. Delicious with seafood. Only 1000 bottles produced.
