This is a delicious, high-contrast wine, with soft forest fruits finished with a tart, chewy tannin. Kind of like “sweet and sour”, but dry and fruity! Its a fruit salad blend of all the varieties of grapes that we grew in 2020. They were all picked on the same day, and left to macerate in a CO2 blanket (piped from other ferments) for 12 days before pressing and normal alcoholic and malo-lactic fermentation. This tequnique is known as pure carbonic maceration, as none of the grapes are crushed initially and the tannins become much more soft and chewy, ideal for a young, preservative free organic wine.

The wine is unfiltered and has a slight lees (yeast) haze and will slowly form a sediment. The anti-oxidant activity of the lees may help preserve the wine over time.
